Château de Chaintré is run by winemaker Yannick Paquet. Yannick is the son of Jean-Paul and Monique Paquet, who established themselves in Pouilly-Fuissé in 1959. The family owns three Pouilly-Fuissé domaines and has been making wines since 1970. Yannick’s domaine, Château de Chaintré, consists of two hectares of Pouilly-Fuissé vines which are 45 years old.

Located in Chaintré, the vineyard’s altitude of 200 – 300 metres above sea level gives the wines lifted perfumes and crisp acidity, while the south and south-west exposure and limestone/clay soils give the wine the ripeness and weight characteristic of Pouilly-Fuissé. The Paquets appreciate the generosity of nature and respect the land and vines by practising sustainable viticulture or ‘la lutte raisonnée’. Organic fertiliser is applied annually according to the needs of each plot. Meticulous leaf plucking is employed to increase exposure to sunlight and airflow and to combat fungal disease instead of using sprays.

The grapes are hand-picked and sorted before gentle pressing with a pneumatic press, then settling and fermentation using indigenous yeasts takes place in stainless steel. The wine is aged 90% in stainless steel and 10% in oak barrels (50% new and 50% second and third fill) for 11 months on fine lees to add depth and complexity. We enjoy Yannick’s Pouilly-Fuissé for its freshness, balance, elegance and just the right amount of richness on the palate expected from the finest Pouilly-Fuissé.
