Domaine Hubert Lamy

The domaine was created in 1973 by Hubert Lamy, father of Olivier, who joined in 1995 and runs the property today. What began as eight hectares has now reached 18.5 hectares, planted predominately with Chardonnay (80%) in Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay.

Olivier practices la lutte raisonée in all of his vineyards, adhering to organic practices and spraying only when necessary. Lamy's cellar has three levels, allowing Olivier to work by gravity. The whites are fermented in French oak barrels (300 litre and 600 litre) and left on their fine lees without bâtonnage or sulphur dioxide until they are racked. He has also reduced the use of new oak on his whites over the years, and now uses barrels ranging in age from one to five years old.

The Bourgogne 'Les Chataigners' is from a steep, cool, limestone vineyard that is the last to be harvested. It has impressive concentration for a Bourgogne, with bracing acidity and fragrant lemon citrus fruit. His Saint-Aubin 'La Princée' usually contains 10 different parcels, but frost on some parcels in 2016 greatly reduced the size of the blend. Limes and tangerine entice the nose with bracing acidity and a delightful savouriness coming through on the finish. The Saint-Aubin 1er Cru 'Clos du Meix' comes from a 0.7 hectare walled parcel that results in a wine that is richer and rounder, partly due to the warmer site. Lamy's Pinot Noirs are fermented in cement vats before going into French oak barrels (20% new) for 18 months ageing. The Santenay 'Clos des Hâtes' displays a wonderful medley of berry fruits with supple tannins on the palate, which Olivier attributes to zero SO2 addition during élevage.
