At its best, Beaujolais is a deeply pleasurable wine. The wines of Dominique Morel encapsulate this style better than most. Dominique’s philosophy is to make wines he likes to drink, with plenty of fruit, a good colour and a rounded mouthfeel.

Dominique has 18 hectares in total (three of which are in Fleurie) of old bush vines, up to 70 years of age, situated on relatively low vigour granite soils. As a result, the vines have to struggle to survive, but stressed vines produce superior fruit. The grapes are treated minimally in the cellar, undergoing a semi-carbonic maceration to extract colour, aroma and tannin before fermentation takes place over five to eight days. The wines remain in stainless steel and are naturally stabilised by the low temperatures, so Dominique does not need to undertake aggressive fining and filtration.

The Beaujolais-Villages has delicate perfumes of fresh red cherries and violets. The Fleurie, which comes from 45-year-old vines, has a lovely concentration on the palate. An elegant wine which is well-balanced with bright and lifted acidity.
