At its best, Beaujolais is a deeply pleasurable wine. The wines of Dominique Morel at Domaine de Gry-Sablon encapsulate this style better than most. His philosophy is to make wines he likes to drink, with plenty of fruit, a good colour and a rounded mouthfeel.

Dominique has 18 hectares in total of old bush-vines, aged up to 70 years, situated on relatively low vigour granite soils. As a result, the vines have to struggle to survive and stressed vines produce superior fruit. The grapes are treated minimally in the cellar, undergoing a semi-carbonic maceration to extract colour, aroma and tannin before fermentation takes place over five to eight days. The wines remain in stainless steel and are naturally stabilised by the low temperatures, so that Dominique does not need to undertake aggressive fining and filtering.

Dominique has three hectares in Fleurie, where the Gamay grape exhibits the floral perfumes that are characteristic of this Beaujolais Cru.
