After having developed a keen interest in beer, having seen the rise of the urban food movement and having always had a soft spot for bees, founder Hannah Rhodes wanted to create a unique and engaging speciality beer brand that combined all three of these elements.

Hiver brews with both rural and urban British honey to showcase and support the local beekeepers. The hops are toned down and an organic speciality malt is used to support the natural honey flavours. Urban London, English Blossom and Heather honeys are used during fermentation and conditioning and, as a result, the Honey Beer is medium bodied and low on bitterness. The beer remains unpasteurised to allow the subtle flavours to shine through and the honey adds a creamy mouthfeel to this moreish and refreshing blonde beer. The Honey Ale derives its colour from more heavily roasted malts and a late season blossom honey. Hiver uses both an aromatic and a bittering hop for this beer, ensuring the malty sweetness and honey aromas are well balanced by the earthy hops and a textured mouthfeel. The Honey IPA is an Indian Pale Ale balancing woody, earthy aromas with honeyed top notes.
