Louis Bouillot is not only the largest producer of Crémant de Bourgogne but also one of the oldest, having been founded in Nuits-Saint-Georges in 1877 by Jean Bouillot. Today, the house is owned by the Boisset family, but overseen by specialist Crémant de Bourgogne winemaker Frédéric Brand. Both wines are made using the ‘méthode traditionnelle’, the same method used for Champagne, and undergo extended lees ageing.

The Pinot Noir and Gamay for the ‘Perle Noire’ come from vineyards predominantly in the northern areas of Burgundy, closer to Champagne, along with some fruit from the Mâconnais.

The Pinot Noir grapes for the ‘Perle d‘Aurore’ are sourced entirely from vineyards in the Côte d‘Or and the Côte Chalonnaise, while the Gamay is from the Mâconnais. This sparkling rosé has a pale pink colour that is called ‘oeil de perdrix’ or ‘partridge’s eye‘.
