Founder Bethan Higson has worked in the wine trade for many years and is always in search of complexity and balance in her drinks. When she became pregnant, she turned all of her attention and skills to finding a non-alcoholic drink that was bold, flavoursome and not too sweet. Inspiration came from the world of drinking vinegars: delicious vinegar-based fermented beverages. These concoctions have a rich history which dates back to Ancient Greece and were very popular in London bars in the 17th century.

Mother Root was born in Bethan’s kitchen in Peckham. Her ginger switchel is an intensely concentrated, ginger-flavoured drink. Unlike many other non-alcoholic products, there is no water in this switchel, only perfectly blended organic apple cider vinegar, blossom honey and fresh ginger juice as well as ginger extract. A touch of chilli gives a warming kick that helps make up for the lack of alcohol.

Mother Root Ginger Switchel offers an unusual twist to both non-alcoholic and alcoholic cocktails. It is delicious mixed withsparkling water for a refreshing and reviving drink, or simply enjoyed neat with ice.
