Grupo José Estevez, producers of acclaimed Sherry brand Valdespino, holds vineyard land classified as one of the 'Grandes Pagos de España', a status which is conferred on exceptional plots for single vineyard wines across Spain. For the past five years, they have worked tirelessly in their Macharnudo vineyard to identify the perfect plot of vines to make a still wine exclusively from Palomino grapes.

This vineyard, known as Macharnudo Alto (High Macharnudo), is situated in the highest point of the Sherry DO at 135 metres above sea level with excellent, south-eastern exposure and the unique limestone 'albariza' soil which absorbs moisture and limits evaporation in this region's hot climate. The conditions are perfect for growing Palomino and result in wines with outstanding freshness, personality and great mineral character. The grapes used to make Ojo de Gallo are hand harvested to protect them from the hot Spanish sun. Fermented in temperature-controlled, stainless-steel tanks, the wine is then aged on its fine lees for six months which adds a beautiful structure and complexity to the finished wine.

Ojo de Gallo boasts aromas of ripe peaches and lime zest, which are complemented by a more complex and savoury character. On the palate the wine is fresh with a moreish salinity and a long and lifted finish. The Ojo de Gallo really is one of a kind. It is another triumph from a producer who continues to astound us with their innovative ideas and impeccably excellent wines.
